Is your landscaping tasty? There are many options for creating edible landscapes — from incorporating blueberry bushes into your landscaping, to planting a dedicated herb garden. At our house, we like to keep a potted herb garden on our back porch (right outside the kitchen door so it’s incredibly handy to access at dinnertime).
One of our favorite summertime lunches or dinners is Caprese Salad. With a fresh tomato (hopefully one from your garden!), mozzarella cheese, olive oil, sea salt, black pepper and fresh basil, you’re on your way to a healthy and flavorful meal.
You can also be creative with this dish and add some other fantastic flavors. When Bob worked for the landscape design division of the golf course design firm Nicklaus Design, he frequently traveled to Mexico where he enjoyed Caprese Salads with a classic Mexican ingredient — avocado!
If you’re considering adding edible elements such as herbs to your landscaping, keep these things in mind:
Location.
Most edible plants need at least 5-6 hours of direct sunlight.
Attention.
Many edible plants such as blueberries, tomatoes, etc. will need regular attention to keep fruit from rotting after it has fallen to the ground.
Water.
Most edibles need supplemental water throughout the growing season. So be prepared to keep water accessible.
